One-Of-A-Kind Chicken Enchiladas

My mother is one that first taught me how to make enchiladas. The only thing that I didn’t care for was assembling them. First you made the meat, then you had the sauce cooking in a different pan, then you had to put it all together in a baking dish.

It seemed like an awful lot of steps just for something that looked a lot like a taco. Don’t get me wrong, they were delicious and I loved eating them, but it seemed like there should be an easier way. When I found this recipe for chicken enchilasagna on Recipe Lion, I was intrigued to say the least.

After discovering how simple assembly was, I just had to try them. It was so easy to put this dish together, and it tasted just as yummy as regular enchiladas.

This was actually easier to eat because there was no cutting up individual enchiladas, the tortillas were already ripped apart. This was perfect for my little ones.

I didn’t even have to bust out the kitchen scissors. We will be having this time and time again!
