I first tasted these stuffed potato skins at one of my friends’ pool party. I am not one to be creative about dishes so such a delicious and creative finger food like this is often out of my radar. I just happened to arrive when my friend was still preparing the food that she would serve and I saw a tray of these resting on the counter. Of course, I couldn’t resist but to snatch one. It smelled so good when the kitchen was filled with these wonderful flavors!
My friend sort of chided me about it, but still allowed my to snatch another one. I swear this stuffed potato skins were too addicting! There was that sweet taste on it and a little bit of sourness that just taste good together.
The guests loved it too. Because I found myself helping my friend make another batch when the first batches that she served were gone in less than an hour. I mean these beauties truly tasted good with beer that I couldn’t blame them one bit!
