Ahh, how I love a good recipe for a decent homemade sandwich. You know, not just the ham and cheese, grilled cheese or peanut butter and jelly sandwich, but something that is homemade, with substance and really fills you up and makes you feel like you are at a restaurant. I have a favorite way to make myself such a great sandwich, and I actually use leftover meatballs for it.
I place them in a hoagie roll topped with mozzarella cheese and then I pop it in the oven until it is nice and crispy on the outside, while still soft on the inside and the cheese is fully melted. Out of this world, amazing, let me tell you!
Well, the other day, I had made a delicious BBQ shredded chicken in the crock pot that tasted superb. We enjoyed it in our buns almost like pulled pork sandwiches with an extra drizzle of BBQ sauce. We also enjoyed it over rice and even mashed potatoes at some point in the week.
Well, when I had just one container left, I knew I had to do something with it, so I got right to work and created this amazingness of a sandwich. You will never want a different panini.
