I am a huge fan of cheesy meals. I mean, I have been known to throw EXTRA cheese into meals that do not even require cheese. I know, I know, it is pretty bad, but I just love it. Cheese makes everything that much better. I mean, my absolute favorite meal these days is a French Croque Monsieur. It is basically just a sandwich (crustless white bread!), with ham and cheese in the middle, then a big hearty scoop of cheese sauce, then the bread on top and more cheese over the top that toasts to a perfect golden brown!
Well, I think you can tell how much I love my cheese. I am the person who lets the waiter pour cheese over her dish and never tells him when to stop so he feels awkward and does not know what to do. I have also been the person who tells him, “no you cannot stop there! Keep going!”
Cheese is just so good and absolutely delicious with every single meal I can think of, which is why this soup is amazing. It is a variation of a cheesy dish that I love and now I can pour all that cheese over a soup!
