It seems like every time I turn around one of my kids has to take snack to school. I don’t like to be that mom that sends a box of fruit snacks, but I don’t have time to be the mom that spends hours baking and assembling fancy cupcakes either. The last time my daughter came to me, of course the night before snack had to be taken in, I took to the internet to see what I could find.
I came up with this recipe for no-bake peanut butter and cornflake cookies on Spend with Pennies. It was perfect. Not many ingredients, no baking time, and the appearance and flavor of a nice homemade dessert.
I put them together fast and packed them up for school the next day. When I asked my daughter for a report, she said that all the kids really loved them. Even the teacher had one and said they were really good.
This is a dessert that I can handle! I can see this going in for school snack many more times in the future. It makes a perfect after school dessert too!
