I was in that dreaded middle of the week slump. It wasn’t Monday so we didn’t have weekend leftovers in the fridge. It wasn’t the weekend so I wasn’t geared up for getting some time with my family quite yet. I was just tired. I didn’t feel like cooking. Didn’t feel like going out to eat. No take out food sounded good. I had to do something else. That’s when I remembered this recipe I had found on Group Recipes.
It was a simple hamburger casserole that included all the ingredients I already had at home. I got to work, (which literally only took minutes), and then sat back and waited for the slow cooker to do the rest. When this started warming up in there the smell took over the house and it really boosted my motivation.
As the timer was ticking down I actually got some cleaning and laundry done knowing dinner was on it’s way. And boy was it good! Everyone at the table loved it…we will be keeping this recipe close.
