Breakfast is always the busiest time of the day at my house. Especially during the week. Kids are looking for homework, my husband is grabbing something to eat while trying to get ready for work. I’m just trying to make sure that everyone gets fed before they leave the house. I grimace at the thought of someone being hungry the minute they sit down to start the day.
You can’t be very productive if your stomach is distracting you. I don’t always have time to prepare a nice big breakfast, and oatmeal, cereal, and toast gets overplayed. When I found this recipe on All Recipes, I was so excited.
The part that drew me in the most was the fact that it said you could prepare it the night before. How perfect. After dinner cleanup was done that night, I went into the fridge and pulled out these ingredients.
Setting the casserole dish in the fridge, I was so happy that breakfast had already been started for me. In the morning, I slept in just a little bit longer, preheated the oven when I got up, and popped this delicious dish in there.
It was done in no time and my family eagerly gobbled their portions right up. There were leftovers so I just put them in the fridge. They kept nicely and I served it again the next day. This recipe is a life saver for sure!
