It was another one of those days. My husband called me on his way home from work and I could tell that he had just finished up with a tough day out in the construction world. After 20 years of marriage I know my husband well enough to figure out along with exhaustion comes starvation. I hadn’t started anything for dinner and he was going to be home in an hour. That meant no time to run to the store either.
Thanks to a quick search on Group Recipes, I stumbled across this and based on the comments, figured I would give it a whirl. Thankfully, the ingredients list was short and I have everything already in my kitchen. I quickly started tossing it all together and within just a few minutes the pan was going in the oven.
The timer went off just as my husband’s truck pulled in the driveway. He sat down and scarfed up two entire plates of this dish! Pork and potatoes to the rescue!
He ended up getting a nice and relaxing evening in and we all went to bed happy. I’ve made this several times since and it’s always a hit.
