This Is How It Should Be – Easy Like A Sunday Morning!
What time do you usually get up on a Sunday morning? I don’t know about you, but there’s no way I’m getting up before 9am, and even that feels a little too early!
The problem is, by then my kids will be starving and driving me nuts while I’m trying to make them breakfast as fast as possible. It’s Sunday, right? So I don’t exactly feel like serving them the usual bowl of cereal with a glass of OJ, that they have almost every morning.
My favorite solution to this problem is a nice, hearty make-ahead breakfast casserole. Like this one! Packed with protein, no-one is going to leave the table hungry. Add some veggies or your favorite seasonings, serve with toast or turn this into a lunch by adding a side of fresh, green salad.
And I wouldn’t mind having this for dinner, either! A little bit of hot sauce, and maybe switch to spicy Italian sausage..? Yumm-ee!
