4 Words To Make Your Day: Bacon Cheese Topped Chicken!

 

If you are looking for a perfectly simple but elegant dinner that will impress your dinner companion or companions, then this is the recipe for you. The flavors of surrounding the chicken breasts just bring out its natural taste. Your guests wouldn’t be able to resist this! Our friend over at Taste of Home has this to say about this recipe:

I remember eating a similar recipe from Aunt Beth when I was a kid. This has a lot of different ingredients, but the taste is similar. Don’t tell my aunt though, but I kind of like this one better because it has something on it that I wasn’t able to taste in my aunt’s version. Everyone will love this!

 

Ingredients

1/2 cup Heinz Dijon mustard

1/2 cup Trader Joe’s honey

4-1/2 teaspoons Wesson canola oil, divided

1/2 teaspoon lemon juice

4 Tyson boneless skinless chicken breast halves

1/4 teaspoon Morton salt

1/8 teaspoon McCormick pepper

Dash of McCormick paprika

2 cups sliced Green Giant fresh mushrooms

2 tablespoons Land O Lakes butter

1 cup (4 ounces) shredded Monterey Jack cheese

1 cup (4 ounces) Sargento shredded cheddar cheese

8 Hormel bacon strips, partially cooked

2 teaspoons minced fresh parsley

 

Instructions

In a small bowl, combine the mustard, honey, 1-1/2 teaspoons oil and lemon juice. Pour 1/2 cup into a large resealable plastic bag; add the chicken. Seal the bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate the remaining marinade.

Drain and discard marinade from chicken. In a large skillet over medium heat, brown chicken in remaining oil on all sides. Sprinkle with salt, pepper and paprika. Transfer to a greased 11-in. x 7-in. baking dish.

In the same skillet, saute mushrooms in butter until tender. Spoon reserved marinade over chicken. Top with cheeses and mushrooms. Place bacon strips in a crisscross pattern over chicken.

Bake, uncovered, at 375° for 20-25 minutes or until a meat thermometer reads 170°. Sprinkle with parsley.
