You’re Going To Crush These Oven Potatoes…Literally!

The last time we went to visit my Uncle Fred, he told us he wanted to feed us dinner. At one time he was a chef in a very popular restaurant, so anytime he said he was cooking, we took advantage.

When I asked him what was on the menu he said he was making roast and crushed potatoes. Oh yummy. Mashed potatoes and roast. One of my favorite meals. When we got there, I was looking for the big kettle of potatoes and bowl of gravy on the table, but it was nowhere to be seen.

He said, “No dear, crushed potatoes.” What on Earth? When he brought these little beauties out I couldn’t wait to try them. They looked and smelled incredible. When I finally got my plate, I didn’t wait to try a taste.

They were just as good as they looked. He gave me the recipe, which was similar to this one on Group Recipes. I tried them at home later on and not only were they good, they were really fun to make.

I even let the kids do some of the crushing with me. It’s almost therapeutic! And you get a nice meal afterwards…what more could you ask for?
