Most people I know, whether they love cooking or not, seem to think cornbread is nothing fancy. “It’s just your ordinary cornbread”, my friend told me when I had just had a slice of the cornbread she made – still so warm that the butter on top melted beautifully, possibly turning this wonderful Southern treat even more delicious. To me, cornbread has always been the highlight of any meal.

It must be because my grandmother used to make such tasty cornbread that we would sneak into her kitchen during the night, just to get one more piece! In the morning we woke up to her laughter, as she found out the pan was empty.

Unfortunately, I don’t make cornbread very often these days. Somehow life always takes over and it makes me think I don’t have time for baking. It’s silly – especially because it only takes 30 minutes to make this lovely cornbread!

This makes the tastiest side to any meal, but my favorite way of eating it is on its own, with a slab of real butter and some honey on top – and preferably in the middle of the night when everyone else is sound asleep.
