Out-Of-This-World Veggie Quesadillas

Now that my kids are older, these aren’t always enough to fill them up like a meal would. However, I can toss them together for a quick snack after school. It keeps them from reaching for the potato chips or candy like they would otherwise. It’s also a nice energizer when either of them have a sports practice or game. It won’t weigh them down and I can see a noticeable improvement in their performance from when they eat something that isn’t quite so good for them.

These little treats will fill you up and keep you satisfied for hours. It’s a great way to please everyone at the table.

 

Ingredients

8 medium whole wheat tortillas
1 c monterey jack cheese
1 c Kraft sharp cheddar cheese
1/2 lb chicken breast
3/4 lb broccoli, fresh
4 clove garlic
2-3 Tbsp Mrs. Dash original
4 Tbsp olive oil, extra virgin
any dash(es) sea salt
any dash(es) black pepper

Instructions

Rinse and separate broccoli into extra small pieces. Peel and mince garlic.
Season chicken with sea salt, pepper, and Mrs. Dash Original. Cook chicken with 1 tbsp of the olive oil on medium heat. Cook until browned on each side.
Remove chicken and cut/shred into flat pieces. It’s okay if it’s not fully cooked in the center. Cooked or not, put chicken back into the pan.
Add remaining 3 tbsp of olive oil, the broccoli pieces, and minced garlic. Stir to evenly distribute the olive oil throughout the broccoli and chicken. Season with sea salt, pepper, and Mrs. Dash Original (if desired). Cook for several minutes, until broccoli is soft.
Remove chicken and broccoli mixture, and set aside. Place tortilla on pan and immediately put on cheddar cheese (about 1/4 c). Sprinkle 1/4 of the broccoli and chicken mixture on top of cheddar, then add about 1/4 c of the Monterey Jack cheese. Place tortilla on top and flip. Cook for a minute or two, or until slightly crunchy. Repeat this step 3 more times. Enjoy!
