When I was a little girl my mom would have these ladies breakfasts at our house once a month. She would always whip up the bets things to eat and even though the breakfasts were for adults, mom would always let my sisters and I eat the yumminess. Mom was such a gem! Anyway, quite often, mom would make breakfast casseroles. I always loved these casseroles as they contained all the yummy things you’d want to eat for breakfast like eggs, bacon, and cheese. Yummo!
Sometimes, mom would even whip up sweet breakfast casseroles such as pancake or French toast bakes. Those were so yummy! Breakfast casseroles have a tendency to feed a crowd and not be too much of a hassle to put together.
All the ladies at my mom’s breakfast gatherings would ask her for her recipes. I always thought this was funny because would they copy my mom’s breakfast casserole idea when they hosted the ladies meeting at their homes? LOL Enjoy this yummy recipe for breakfast frittata, you’re going to love it!
