Wowza! That was my first thought when I tasted this yummy brunch casserole. I found it on Anna’s Kitchen and let me tell ya, Anna is such a great cook! This wasn’t the first recipe I’ve tried from her wonderful channel, and I guarantee it won’t be the last one, either.

This time I decided to give this wonderful Italian brunch casserole a shot. We are getting back to our usual work and school routines after the holidays, and I wanted to make something easy and delicious for dinner. That’s right; even though this is basically a breakfast or a brunch casserole, I made it for dinner. And my family was crazy about it!

You’ll be amazed by how easy this is to put together. It’s perfect for anyone cooking for a large crowd, and you could simply halve the ingredients if there are not that many of you. Plus, the leftovers will make a great lunch the next day!
