Up North, where I live, we had a pretty awful spring this year. At some point I was sure summer had been cancelled and someone just forgot to tell me about it… But, like every year, summer finally arrived and we have literally not stopped barbecuing ever since! I love all kinds of “BBQ food” but surprisingly, my husband is picky. He loves a good steak – well, any kind of BBQ meat, really, but he hasn’t always been too keen on the veggies.
Being the polite man that he is, he has never complained about the vegetable dishes I’ve prepared in the grill. But every wife knows when her husband is not exactly thrilled about something, right? So this summer I started a search for the Best Grilled Veggie Dish On The Planet.
Of course I had tried grilled corn before but it always turned out kind of plain, even for me. I knew my husband liked spicy and exotic flavors so when I came across this recipe over at Lakeland, I knew right then and there that I had hit the jackpot!
My only worry was that it would be difficult to make, or somehow too messy, and my husband wouldn’t like it after all. But he absolutely loved it – and so did our dinner guests!
