When it comes to soups, I never used to like chicken noodle soup when I was younger. I wasn’t a picky eater at all! I ate anything and everything my mother made for dinner, but somehow it was just the thought of chicken noodle soup that made me cringe. My Mom explained it must have been a bad memory from when I was too little to remember. She said our neighbor had served us really tasteless soup one day and she just couldn’t refuse. Apparently I really, really didn’t like it, haha!
Whatever the reason, I wasn’t a fan of chicken noodle soup. It took me years to even build up enough courage to give it a try – and by that I mean making this soup myself. Trust me, I did plenty of research before I decided on the recipe!
I also didn’t want my kids to find out there was a dish I had refused to eat for so long. I want my kids to appreciate all kinds of food, so this was just something I needed to get out of my system so that I could set a good example. Carpe diem, I thought, and made this recipe…
