Southwestern Piggy Pockets – A Fun Food

Whenever the county fair would come into town, me and my siblings would sit out on the curb in front of our house and watch all the trucks carrying rides, games, and food drive by.

We knew, that in just a day or two, we were going to be enjoying the best part of summer. It was cheap to go to the fair back then. We always saved up all of our allowance so that we could go every single day. Sometimes we would ride the rides, other days we would just walk around and play games.

Every time we were there though, we always had to eat fair food. It was cheap back then too. One of my favorites was the corn dog stand. They were always cooked to perfection. When I found this recipe on Facebook for Spanish pigs in a blanket, it kind of reminded me of those yummy corn dogs.

I couldn’t wait to make them at home. They were so simple and so yummy. They didn’t taste anything like those fair dogs…they were a lot better!
