We all know chicken soup is the ultimate comfort food and it will cure pretty much all your aches and worries. This chicken and rice soup was what my grandma always brought me when she heard I was ill. My mother would make chicken soup, too, but somehow it just wasn’t the same (sorry, mom!) Honestly, I think grandma had some kind of a secret ingredient she never told us about. Or maybe it was just the love she poured into this.
This soup is very healthy, lean – and also easy on your wallet! It’s perfect for those days when you have leftover chicken from last night’s dinner. You can also make a large batch of this and freeze it in portions – that way you’ll always have a quick lunch ready when you need one.
If you want to make this even healthier, you can use whole grain brown rice instead of white. It’s also easy to add even more of your favorite veggies into this – or use turkey instead of chicken. It will always turn out absolutely delicious!
My secret ingredient is chili powder! Whenever I’m feeling a bit under the weather, I make this soup and add plenty of chili powder. Maybe it’s all in my head, but it really seems to work!
