Skip Your Sandwich And Have This Stew For Lunch

My husband and I haven’t always been the healthiest of eaters. Especially after our kids moved out on their own, we started eating out at restaurants more and more. With the temptation on the menu, it was hard to order a salad. Who wants leafy greens when you can have a big slab of prime rib? Anyways, after a couple of years, it started to show at our doctor visits. We got the unwanted and not very pleasant news that we needed to cut back on the takeout.

That’s all I needed to hear to start looking around for some healthy dishes at home. We have grandkids now and I want to be around as long as possible for them. I found this recipe for stew on My Recipes, and I was excited to give it a try. It was chuck full of healthy ingredients, there were simple directions, and it looked fabulous.

When we gave it that first trial run, I was actually surprised at how good it actually was. We both had two bowls that night, and ate the leftovers for lunch the following day. Now I make this a couple times a month and we skip going out.
