Pleasing Pulled Pork

I was never a huge fan of pork, unless it was in the form of bacon. Then, when I was around 30 years old…my husband and I were invited to a social event at a baseball stadium. The event was catered, which was great. I asked my hubby…per usual, what they were serving. I’m not afraid to stop and eat on the way there if it’s something I don’t like. He told me pulled pork and I crinkled up my nose.

He said, “You don’t like pulled pork?!?” Well…I’ve never had it. He said OMG you have to try it…you’ll love it. I took his word for it and skipped the drive thru.

I was so happy that I did. That was the most delicious sandwich I had ever had at a potluck dinner. I’m not ashamed to say I went back for seconds.

When I got home, I found a similar recipe on Mom & Wife and made it at home a few weeks later. It was so simple to toss together and we gobbled it right up. The leftovers reheated nicely the next day too. I will keep this recipe close for future dinners.
