These Pizza Tarts Are What Happiness Tastes Like

These were a huge hit at the baby shower, but I had to make a TON of them, so it was a bit stressful that first go around. Now, when I make them for my family at home, I realize how easy they are to toss together. They are a favorite of mine to make on relaxing weekend afternoons or for my kids after school snack. There is just enough there to take the edge off without overfilling before dinner. They are super versatile too, so I can make them a different way every time! Check out what they are saying about this recipe over at Group Recipes:

With just twenty minutes of time, you can have these scrumptious little tarts out and ready to eat.

 

Ingredients

6 six inch corn tortillas

½ cups Soy Seven-Burger Mix or Old El Paso Taco Mix prepared per instructions on package

½ cup Ragu marinara sauce

1 package of Kraft Grated mozzarella cheese

4 OZ of grated Italian asiago cheese

2 tablespoons of olive oil

 

 

Instructions

Preheat your oven to 400 Degrees F.

In a Six muffin pan, add the Olive oil with a brush

Brush tortilla with olive oil or butter on both sides.

Place a Tortilla into each muffin tin forcing evenly around rim, they will crack and split not to worry just mold into place as neat as you can.

Place a rounded tablespoon of the soy seven Mix of your choice into each Tortilla

*I use Taco Mix

Place the Mozzarella on top of soy seven or meat if using

Drizzle a few drops of olive oil on top

Add the Italian Asiago cheese and bake for 20 minutes until golden brown.

Cool for ten minutes and run a knife around the Mini Pizza an remove carefully to a plate.
