Oh My Meatballs!

My boyfriend in high school was fifty percent Italian. That meant, of course, he was gorgeous! We dated from tenth grade, all the way through college. During that time, he invited me for dinner all the time. I think mainly because he loved his mom’s cooking so much. I never put up a fight though…it was pretty amazing. She always seemed to have ten different things going at once. You see, dinner at their house was never just one main entree. There were six or seven different pasta dishes, a few salads, bread, and of course dessert.

That’s because, they never ate alone. It was always uncles, aunts, cousins, grandparents…the whole crew. The one thing she made that I could never get enough of was her cheesy meatball tortellini. It was similar to this version on Julie’s Eats & Treats, but she didn’t do it in the crock pot.

Now that I have this recipe, I can make it just like my mother-in-law at home. That’s right, I married that gorgeous man! He says my cooking is almost as good as his mom’s. I don’t think it’s anywhere even close, but I’ll take it.
