Mom’s Magical Quick Honey Soy Salmon

These past few days, Mom has probably received a lot of phone calls from me than she’d have wanted. I knew it kind of surprised her because I wasn’t the type to call or text (it was her frustration back in high school and college). When I was in college, I received a lot of text messages from her asking me how I was or telling me to at least send her one text message every day to assure her that I was still alive and behaving.

But recently, I have been in dire need of homecooked recipes that would help me survive my weeks without relying on junk food. And Mom’s my only answer. The recipes she dictated to me over the phone were mostly fish recipes.

She told me to start eating healthy because I wasn’t getting any younger (thanks a lot for the reminder, Mom!). We had a short argument over the phone because I told her I needed easy recipes, not really super healthy ones. We finally settled on some dishes that compromised with both of our needs and wants.

One of those is this quick honey soy salmon recipe. The recipe I’m going to share with you is a little different from my Mom’s version. This is a bit simpler and easier, but trust me it tastes good as any homecooked meal!
