Who doesn’t like mashed potatoes, right? Such a simple side dish, but it seems to be a favorite among the young and the old. And I don’t think it’ll ever go out of style. With so many variations available, mashed potatoes are here to stay – and have been for quite a while already! Still, I am amazed every time I come across a new recipe with mashed potatoes that I haven’t tried yet. For example this casserole recipe that my mother-in-law was making.
I am so glad I happened to stop by her house the other day, when she was just taking this incredible mashed potato and spinach casserole out of the oven. The aromas alone were to die for!
Although I needed to go home and make dinner for the family, before I knew it, I had a plate in front of me with a good portion of this delightful comfort food. Oh, my, goodness. It was so delicious!
I knew I couldn’t leave until I was holding the recipe in my hands, so she quickly wrote it down for me. I intend to make this next week – and I just know my picky eaters are not going to complain about spinach this time!
