Mama’s Mouthwatering Honey Roasted Pork Loin

When I was in college, I met the man of my dreams. We went to that school for four years together, and I don’t think we ever spent more than two days apart. He was at orientation with me, and we both had the same deer in the headlights look that first day. Thankfully, we bumped into each other and had each other to lean on through the first few awkward weeks. Sure, we started out just friends, but after a year or so, we realized that it was much more than that.

The second year of school, I invited him to come home with me one long weekend to meet my family. There were no arguments on his end. I let my parents know we were coming and asked Mom to make a nice homemade dinner, if she had the time.

As soon as we walked through the front door I knew she had pulled out all the stops and made her famous pork loin. It smelled incredible. My then boyfriend’s now husband’s eyes got as big as half dollars. When we sat down to eat, I don’t think he ever looked up from his plate.

Mom offered him a second slice and he wasn’t shy about it. I knew at that moment, he was going to fit in with our family perfectly.
