Leapin’ Lizards! It’s A Layered Sweet Potato Enchilada Casserole!

I am all for trying new things. Like, for instance, I tried out riding a roller coaster last weekend with my kid at the fair. That will be the last time I ever try that but hey, at least I did it once, right? As far as food goes I’m a little less of a scardy cat. When I first came across this recipe for sweet potato enchilada casserole I thought whoever created it was a nut ball. Then, I tried it. And guess what? it was dang delicious!

Who would have ever known that nixing the seasoned meat in an enchilada casserole and replacing it with sweet potatoes could ever be a thing? You seriously need to try this as you won’t be sorry 🙂
