Lazy Lady’s Simple Cabbage Casserole

Walking into my Grandparent’s house when Grandma was making cabbage rolls is one of my favorite “scent memories.”

You know, the ones when you smell something and it takes you back to a lovely time in your childhood. The only part of the cabbage rolls that I didn’t care for so much was the process of putting them all together. It was a lot of work! Grandma always did it without ever complaining though, just to satisfy her family’s need to eat.

Now that I’m older and life is busy, I want to be able to share this meal with my husband, and even my kids. (Maybe one day their tastes will evolve to love cabbage as much as I do.)

Without the time to steam and fill each leaf, I went on a mission to find something that gave the same great taste in half the time. This Cabbage Roll Casserole is it! It fills those amazing scent memories and our tummies! This isn’t a traditional cabbage roll casserole but rather a VERY simple version.

Quick Tip: Use more or less rice depending on how hearty you want it. Just be sure to have the right amount of water to keep it juicy!

There is way more to cabbage rolls than cabbage, onion and rice. What about the meat and tomato sauce ? I,can see making an easy casserole out of the ingredients in cabbage rolls, but this isn’t it.

Candy, this isn’t for a traditional cabbage roll casserole it’s called “lazy” for a reason. If you search our site you can find a traditional cabbage roll casserole is that’s what you desire.
