Howdy Ya’ll Southern Style Breakfast Casserole

Whenever my dad used to cook, it was good, but everything was always very bland. He wasn’t a big fan of vegetables, so whatever we got was just the basics. Eggs and sausage, meat and potatoes…things like that. Now, when Mom hit the kitchen, we got all kinds of fun stuff. Well, at least I thought it was fun. My brother wasn’t always so fond of the green peppers, onions, chilies, jalapenos, and other extras that she would liven our dishes up with.

I still don’t think he is. Mom used to make a breakfast casserole just like this one from Group Recipes. She would always put it in the slow cooker at night, and we would wake up to the delicious aroma of the sausage, peppers, and chilies cooking together in amazing harmony.

I loved running down stairs to get a big helping of this. Even if it was a dreaded school day, this is one meal that could get me out of bed in a hurry!
