Homemade Pigs In A Blanket – A Childhood Favorite

These are awesome for kids and adults alike. I was never much for hot dogs but these really give them a whole new flavor. We have these at least once a month now. They are cheap to make and take just a few minutes to put together. My children just love them! In fact, each of my kids had two of these yummy piggies in a blanket and I think my hubby had three. Talk about a real hit at dinnertime!

Oh, and did I mention how easy these pigs in a blanket are to make?

 

Ingredients

1 pkg Oscar Mayer hot dogs
2 & 1/4 c Pioneer Brand all-purpose baking mix
2/3 c milk
3/4 c prepared Hungry Jack instant mashed potatoes

Instructions

Rinse the hot dogs and pat dry with a paper towel. Set aside.
Preheat the oven to 450 degrees. Pull out a baking sheet.
In a medium bowl, mix the baking mix, milk and prepared mashed potatoes. Stir well.
Spread some of the baking mix on your work surface. You can use a wooden cutting/pastry board if you like. Scoop the dough onto the work surface. Sprinkle with a little baking mix. Knead the dough, folding and turning, for one minute. If the dough is still sticky, add a little more baking mix.
Using a rolling pin, roll out the dough to 1/2 inch thickness. Using a sharp knife, cut it horizontally into 1-inch strips. Spread the strips out, leaving a half an inch between them.
Pick up a hot dog. Set the top of the hot dog on the left edge of the strip. Roll gently, spiraling the dough around the hot dog. Press dough ends into the main spiral. Continue with all the hot dogs.
Place on ungreased baking sheet leaving some space between them. Bake 8-10 minutes, til golden brown.
