Easy On The Checkbook Broccoli Casserole

I remember vividly living paycheck to paycheck when I still was at home with my parents. By the end of the week, my mom would start reciting “Old Mother Hubbard,” because it was true, our cupboards were bare.

Even if we only had a few food items around, Mom always knew how to make a meal out of whatever it was we did have. She was great at tossing together casseroles out of seemingly nothing. Her broccoli and cheese casserole was always my favorite.

She would take a few dollars, buy some fresh broccoli, and the rest we always had on hand. It was like getting a fresh from the grocery store meal, even when we didn’t have a snack for later that night.

When I found a similar recipe on Recipe Lion, I had to try it out on my family. They all loved the flavor. They couldn’t believe that this is what I used to eat when we hardly had any money in the bank account.

They thought it was a real treat. It brought back so many good memories for me of what a great mother I had. This is now a regular menu item at our house, even when we can afford the finer things in life.
