If there is one thing I learned by going to hang out over at my grandma and grandpa’s house, it was that we don’t waste food. There was never anything considered leftovers at their house. Grandma was pretty amazing at making perfectly portioned meals so that nothing went to waste anyways, but there were times when there was stuff leftover, like when she made a great big ham.
No matter how many of us were there, there was always too much ham for us to just eat. That was okay though, because she had an arsenal of recipes to make up with that ham.
One of my favorite dishes that she made was her ham cakes. They were just like these ones from All Recipes. It was kind of like a potato pancake, but it had the succulent taste of that wonderful ham we had eaten the day before in them.
Now, whenever we have any extra ham at my house, these are going on the table the following day for breakfast for sure!
