Don’t Go To Waste Loaded Mashed Potato Pancakes

No matter what I am making for dinner, when I ask my husband and kids what they want to go with it, the answer is always, “mashed potatoes!” We eat these things like we are never going to have them again. I am constantly buying bags of fresh potatoes, peeling, slicing, boiling, mixing. It’s not an easy job, but if my family is happy, then so am I. There is a bit of an issue at times though.

Either I overestimate how many we are going to need, or my loved ones decide that they are going to fill up on something else. Then we are stuck with a huge bowl of leftover potatoes. Sometimes we can eat them again the next day, but there are casseroles, soups, and other dishes that don’t necessarily pair well with potatoes.

Thankfully, I found this recipe on Spend with Pennies. Now I know what to do with all those leftovers. I never worry about making too much anymore…and sometimes I make extra on purpose just so I know we can have these the next day. Yummy!
