Delicious Shredded Chicken, Salsa, And Tortilla Bake

I found myself surrounded by chicken in my dreams. I blame that animated cartoon movie that my sons wanted to watch that Friday night.

It was about a machine in the sky which causes the clouds to rain with giant food. There were giant chickens in there and that probably went to my subconscious, causing me to have that dream. Well, it was a bit bad because they were surrounding me, but if I was probably bigger in my dream, I wouldn’t have a problem with it. I will probably just eat them.

The nightmare came true a few days after, but not exactly how I picture it in my dream. For some reason, I found myself surrounded with leftover chicken. I didn’t know what to do with them.

For the first day, I made soup and pasta. During the second day, I made sandwiches and chicken salad. But on the third day, I didn’t know what to do anymore other than a casserole dish, so that’s what I did.

I made a different casserole dish this time though; it was something that I don’t usually try. It’s called salsa verde chicken casserole. This casserole is a new take on chicken, and my family fell in love with it!

I didn’t change much with regards to the ingredients; I just adjusted a few of the seasonings to fit the preferences of my family. You should try it for yours!

Quick Tip: If you want to make this and haven’t made the chicken yet, you can easily use 2 cups of shredded Rotisserie chicken mixed with 1/3 cup salsa verde.
