On holidays, birthdays, and even over the weekends, I like to do something a little extra special for my family for breakfast.
There’s something about starting the morning with a good meal that just sets up for a great day. That’s why I do it whenever I have the opportunity. Well, when I make everyone omelettes, it seems like I am stuck in the kitchen while everyone else is enjoying one another’s company.
They get to have some downtime together, but I’m still working away. I wanted to bring an end to it, but I didn’t know how without getting rid of one of their favorite meals. That’s when I found this omelette casserole on Facebook.
My prayers had been answered! The first time I made this, I followed the recipe exactly. I knew that there was a lot more that could be done with it though.
Now, every time I whip up this simple dish, I add all of our favorite omelette ingredients. It lets everyone enjoy a yummy breakfast with nice conversation, including me! I will never go back to skillet-made omelettes again!
