Growing up, we didn’t have a whole lot of money to buy extra groceries. My mom would make one big dinner for all of us, and if you didn’t like it, you could go without eating. She always offered peanut butter and jelly sandwiches though, as a last option. Thankfully, I was always in the mood for a peanut butter and jelly, especially if I was hungry.
I went to bed without eating once or twice, peanut butter and jelly was much better. When I came across this recipe for peanut butter and jelly cupcakes on Just A Pinch, it brought back the memories of back in my childhood when I looked forward to those little sandwiches in place of the goulash or other meal I didn’t really care for.
I couldn’t wait to make them and try one out. They were pretty easy and they were ooey gooey delicious when I bit into one. My kids and husband loved them too. Now, I make them all the time.
