Butternut Squash Soup – An Autumn Treat!

I love going to Panera Bread in the winter months to feast on all their delicious soups.

I am a faithful member of the Broccoli Cheddar cheese soup they have, but every now I then I like to venture out into something a little more seasonal. Sometimes I enjoy a big bowl of Cream of Potato soup, but even then, that is not super seasonal.  I want to enjoy something that you cannot have year round.  So for that reason, I gave butternut garlic squash soup a try.

I know, for a picky person, it is a bit strange to feel the need to venture out and try something different, but I really wanted to. This soup definitely did not disappoint.  It was creamy, full of flavor and the garlic was definitely prominent in the taste.

I also loved the texture. It was so creamy, almost like a baby purée. This dish is the perfect seasonal winter soup to enjoy on a cool day.  It warms you up and the sweetness of it is just so comforting.  Serve this with some really crispy baguette slices and you have got a winner of a meal for the cold winter months ahead.

Quick Tip: If you want a less creamy soup, add more broth.
