A few years ago I was on this totally crazy pineapple diet. I didn’t know it was crazy at the time – just the opposite. I absolutely loved pineapple so I was excited about the fact that I could eat as much of it as I wanted. The only downside was that it was pretty much the only thing I was allowed to eat… Imagine two whole weeks of that! Sure, the diet worked, because by the end of the first week I was so sick of pineapple that I decided I would never eat it again.
I honestly didn’t think I’d be able to have another bite of this tropical fruit after that diet. For the next 4 years I couldn’t even stand the scent of it, but then my husband told me about these baked beans he had tried at the local diner.
For two weeks he begged me to give them a try – nope, not gonna happen. But eventually I gave up just to get him off my back, and I was pleasantly surprised! The thought of baked beans with pineapple would have sounded a little weird to me, even if it hadn’t been for the diet, but the flavors were absolutely perfect together.
